Totchos Bar is a fun new twist on nachos that kids will love

Have you ever made Totchos? Imagine taking crispy, delicious ORE-IDA Tater Tots and topping them with your favorite nacho-style toppings! They’re so delicious and the more variety in toppings your provide, the more fun your family has creating their own Totchos!

How To Create A Totchos Bar

Heat your oven to 350°F and cook tater tots for 25 minutes.

While your tater tots are baking, preheat a skillet to medium heat and brown the chorizo. Once thoroughly browned, remove chorizo with a slotted spoon and allow to drain on a paper towel lined plate.

Place the skillet back on the burner over medium-high heat. Add onion, garlic and green chiles to the pan and sauté until onion is opaque. Set aside.

In another medium pot, you’ll start making your roux (pronounced ‘roo‘). Add butter to the pan and once melted, add in flour and whisk until combined. Cook for one minute, then gradually add milk, still whisking.

Bring the mixture up to a bubble and begin adding cheese, 1/3 cup at a time. Thoroughly melt cheeses before adding next batch. Add in cream cheese and stir to combine.

Cook over low heat until mixture is smooth and free of lumps. Add in 1/2 of the reserved chorizo, onion, garlic, and chile mixture. Stir to combine.

Toppings for Totchos Bar

Place tots on bottom of dish. Top with cheese mixture, remaining 1/2 of chorizo and any additional toppings such as shredded lettuce, sour cream, and cilantro.
