We are a family of grillers. Despite the fact that we live in Ohio and 95% of the time the weather is not grill friendly, we’re out there grilling anyway.
It only takes a year or two for us to destroy a grill. The gas station that fills our propane tanks – yes, I said tanks because we have several on hand – knows us on a first name basis. From meats to vegetables to pizza, we’re always looking for new foods to grill and new ways to grill our favorites.
One of our favorites is Romaine lettuce. Yes, that’s right, lettuce. Grilled Romaine is absolutely amazing because you can really get creative with the types of flavor, it looks beautiful when it comes off the grill, and there’s a dozen different ways in which you can enjoy grilled Romaine.
It’s also really simple to prepare and to grill and makes the perfect lunch or quick side dish to any meal. You can also chop it up for a salad, or serve it as it, which is exactly how I love it!
My husband just adds his favorite salad toppings on his grilled Romaine and, surprisingly, both of our kids actually love it! It’s the only vegetable we can get them both to eat. Proof positive that there’s just something special about foods cooked on the grill.
To prepare our grilled Romaine, we cut off each end of the stalk and split in half lengthwise. Then, we drizzle each side with some EVOO (extra virgin olive oil) and top with our favorite seasonings like salt, pepper, rosemary, thyme, and garlic.
Grill flat side down until the leaves are wilted and start to char. Before serving, squeeze fresh lemon juice over the top and serve immediately. Grilled Romaine hearts are a perfect way to eat light over the summer!
